Strengthened by the savoir faire acquired thanks to numerous collaborations with the Bourguignon wine domains, Sylvain decided to install himself at the end of the 90s with a very precise idea: to produce great wines in the most natural way possible, in every possible way chemical products used in the vineyard and added in the cave. Le vignoble est conduit en appliquant les principles de l'agriculture biologique et biodynamique, n'utilisant que du soufre, du cuivre en très faible quantity et d'autres préparations naturelles. The vineyards find their balance in an ecosystem that does not pollute and produces raisins of quality. To avoid compacting the sun, Sylvian reintroduces the use of cheval within the ranges, in order to keep a sun that is fresh, vital and rich in biodiversity. The vinification is done with a minimal œnological intervention and a maximal preservation of the varietal expression of the grape varieties (Chardonnay, Pinot Noir and Aligoté) and the Marsannay terroir. As is common in the region, Sylvian cultivar. The in-depth knowledge and understanding of the differences in climate and climate between individual vines makes it possible to privilege parcel vinification.
