In parallel, they patiently built their own vineyard, acquiring small plots of land over the years as opportunities arose. This sometimes required clearing, planting, or undertaking significant restoration work. It was a labor of patience, all in the pursuit of crafting their own uncompromising wines. Today, their estate comprises approximately 3 hectares of Jura grape varieties: Savagnin, Chardonnay, Petit Béclan, Poulsard, Gamay, and Pinot Noir. These are planted on gentle slopes, primarily facing south and west, at an altitude of 250 to 320 meters. The soils consist of Triassic and Jurassic marl over Bajocian limestone. The vines are cultivated according to biodynamic principles. The estate also has two cellars: one in Rotalier, where Christian lives, and the other at Mathieu's place in Gizia, 15 km further south. With the vineyards situated between these two villages, this arrangement proves quite practical. The wines are made using indigenous yeasts, without added sulfites. Aging, sometimes lengthy, takes place in old barrels.
