Domaine La Varenne is located in Burgundy. It offers organic wines made from the four traditional grape varieties: Chardonnay and Aligoté for white wine, and Pinot Noir and Gamay for red wine. Aged in oak barrels, the nine cuvées reveal a distinct terroir.
Laurent Bourtourault manages this two-hectare estate. The vines are all located in the village of Culles les Roches. The clayey, marly, and silty limestone, sandstone, and granitic sands make this place a true geological mosaic and a playground for the winemaker seeking the unique character of each terroir. The vines are cultivated using Ecocert-certified organic farming methods. Pigs do the work where the tractor cannot go. Harvesting beautiful, healthy grapes is a constant priority. The harvest is done by hand, and the grapes are quickly transported to the winery to be pressed for the white wines or macerated for the reds. Indigenous yeasts do the work. The wines are aged for 10 to 12 months in oak barrels. Racking and bottling are done according to the lunar cycles and atmospheric pressure. Bentonite clay is used for fining the white wines. No filtration, only light sulfiting depending on the vintage to preserve freshness and clarity. These are the only additives, reflecting the biodynamic specifications.
