We supplement our production by purchasing grapes from winegrowers in the region. Our total production amounts to 30,000 bottles per year. Vine age: 30 to 77 years. Soil: Clay-limestone. Appellations: Regional and village.
We have been practicing organic and biodynamic farming since 2006. Our soils are grassed over during the winter, then lightly plowed in the spring. The grapes are harvested by hand by a small team, sorted manually in the vineyard, and transported in crates.
In the winery, we remain true to our convictions by vinifying our wines using indigenous yeasts, without any additives or SO2. Our wines are aged in oak barrels five years old or older, and in tanks for a portion of our négociant wines. The wines are neither filtered nor fined. We add a small dose of SO2 just before bottling, depending on the cuvée and vintage. The average total SO2 level varies from 0 to 30 mg/L.
