The adventure began in 2022 with the acquisition of Pierre Boyat's vineyards. Pierre was Simon's former internship supervisor during his BTS (Advanced Vocational Diploma) in Viticulture and Oenology. The vineyards consist of 2.6 hectares of Gamay and 0.6 hectares of Chardonnay, located in Leynes on granite soil, and 0.5 hectares of Chardonnay in the Viré-Clessé appellation, situated in Clessé on clay-limestone soil. The vines are certified organic. They are trained at low density, allowing for cover crops (rye, clover, and mustard) which are either destroyed or flattened to create mulch. Weed control is managed through mowing and soil cultivation. Treatments are limited to the use of copper and sulfur, and the application of herbal teas that we prepare ourselves using comfrey, horsetail, willow, and yarrow. We also use biodynamic preparations. The grapes are harvested by hand into crates. All the grapes are cold-stored for 24 hours, then placed in vats as whole bunches and treated with CO2. The maceration time varies depending on the taste of the juice. We aim to make wines as naturally as possible, and we limit the use of SO2 to when absolutely necessary! 2022 is our first vintage!
