The first plantings date back to 2019, in living soil or no-till soil.
We chose to diversify and interplant; Melon de Bourgogne, Grolleau Gris and Noir, Pineau d'Aunis, Albariño. At the same time, we wanted to make our own wine from the start, by harvesting grapes from other winemaking friends, to experiment and gradually choose our grape varieties.
We use no machinery in the vineyard… mulching, hoeing, green manure, and the same goes for the winery… no pumps, a manual vertical press, and racking by gravity. Fermentation occurs with indigenous yeasts, we don't filter, and for our cuvées, we aim for zero sulfur during vinification.
We are discovering and experimenting with vines and wine in a new territory, with a strong desire to nurture it, certainly full of doubts, but with the certainty that it will be generous. We use biodynamic methods in the vineyard with the aim of reducing conventional treatments used in organic farming and strengthening the plant's defenses.
Biodiversity, buzzard perches, agroforestry, herbal teas… are our allies and support our approach. We harvested our first grapes in September 2023, by hand of course. This will be our first vintage made with our own grapes.
