Our harvest is manual. We vinify with indigenous yeasts, without adding sulfites, in whole bunches.
Since we set up in late 2018, we have replanted a hedge around our vines, planted a few agroforestry trees, and dug a pond. We have between 1 and 4 beehives per year on the edge of the vines.
