Our grapes are harvested by hand. We vinify with indigenous yeasts, without adding sulfites, using whole bunches.
Since we settled here at the end of 2018, we have replanted a hedge around our vines, planted some trees using agroforestry techniques, and dug a pond. We have between 1 and 4 beehives per year at the edge of the vineyards.
