A winemaker who must work their vines without chemicals, using only plant treatments based on biodynamic principles; managing the grass solely by hand or with mechanical tools; planting cover crops to increase biodiversity and provide the resources the vines need. A winemaker dedicated to preserving their terroir and taking great care of their vines to produce beautiful grapes. This is where winemaking, according to my vision, begins. A wine that starts with a hand-harvesting to select the finest grapes. Upon arrival at the winery, the grapes undergo natural fermentation with their own indigenous yeasts; no additives are used. During this fermentation, the process is monitored several times a day to control its progress. At the end of fermentation, no filtration is carried out to preserve all the life within the wine. Aging takes place either in barrels, which are cleaned only with steam, or in wine storage tanks; no fining is performed. This stage varies depending on the vintage, it generally ends at the end of spring.
