Domaine des Fables, created in 2019, is located on the hillsides of Chautagne (Savoie), near the Rhône and Lake Bourget. On soils of sandstone molasse and limestone scree, the vines benefit from a southwest exposure and a climate tempered by the lake and the river. In this setting, the plots of vines rub shoulders with woods, streams and meadows. I cultivate the vines there with respect for living things, so that they offer grapes that tell their story and that of the vintage. The entire estate was committed to organic farming in 2020 and I am gradually applying biodynamic practices as well as agroforestry. My goal is to create a balanced ecosystem around the vine with maximum biodiversity.
This work continues in the cellar, all fermentations are spontaneous, the vats adapted to the harvest with little intervention, the breeding guided by the stars and the evolution of the wines. The wines of Domaine des Fables are without inputs or exceptionally sulphites at low doses (1gr/hl So12). The wines are bottled without filtration.
