On soils of sandstone molasse and limestone scree, the vines benefit from a southwest exposure and a climate tempered by the lake and the river. In this idyllic setting, the vineyard plots lie alongside woods, streams, and meadows. I cultivate the vines with respect for all living things, so that they produce grapes that tell their story and that of the vintage. The entire estate was converted to organic farming in 2020, and I am progressively implementing biodynamic practices and agroforestry. My goal is to create a balanced ecosystem around the vines with maximum biodiversity.
This work continues in the cellar, where all fermentations are spontaneous, the vats are adapted to the harvest with minimal intervention, and the aging process is guided by the stars and the evolution of the wines. Domaine des Fables wines are made without additives or, exceptionally, with very low doses of sulfites (1g/hl SO12). The wines are bottled unfiltered.
