Le vin des Pauzes - Florence Limousin & Damien Aube
We are in the hamlet of Pauzes, in Beaumont in southern Ardèche and the wines have a beautiful view.
Since our meeting, we have had in mind to make wine. After an oenologist diploma in Dijon and a few vinifications with inspiring winegrowers, we made a corner at home to put the press, vats and barrels and 2021 is our first vintage.
Little by little, we are recovering vines and clearing old terraces on the schists of the hillsides of the Drobie valley to (re)plant them with vines, in particular with resistant grape varieties in order to arrive at "natural wines" of the vine to the cellar.
In the meantime, we vinify in partnership with winegrowers with whom we share cultural visions and whom we warmly thank for their precious grapes.
In the cellar, we accompany the grapes with indigenous yeasts, without input or filtration and with slow pressing in a manual ratchet press. Aging varies according to the cuvées, between vats and barrels of several wines.
