The adventure began in 2020 in the cellar of Domaine Des Cotes Rousses. Marielle and Nicolas gave me the opportunity to launch my winemaking business, as a wine merchant and producer. I was able to source grapes that had been organically farmed for several years with great conviction. Now established in my own cellar in the commune of Les Marches, currently undergoing organic conversion, I strive to cultivate my vines with respect for the soil, the plants, and the surrounding wildlife.
Almost all the work is done by hand, and I've just acquired a micro-tractor for certain tasks. The same goes for the "trading" side of things; I only work with organic producers or those in conversion, but above all, people who share similar values with me.
The grape varieties used are Jacquere, Roussette, Mondeuse, Gamay, and Pinot Noir. Indigenous yeasts are used, the juice is unfiltered, and the wines are aged in demi-muids, jars, or vats to preserve the identity of the grape varieties and terroirs. Chaptalization is strictly forbidden; I am committed to making wines without additives, but for certain cuvées, I have had to resort to it, and the addition of SO2 before bottling never exceeds 2g/hl.
