Entre Vilas - Rodrigo Veraldi Ismael
We are a small winery established in the Altiplano do Baú (Serra da Mantiqueira in São Paulo) at 1600 meters above sea level. Since 2005 growing grapes with organic management (not certified). We use covers (plastic tunnels) to protect the vines from summer rains, so there is no need to use fungicides as the tunnels protect them from excessive humidity and with our nutritional management we keep the vines in excellent health throughout the cycle. We do not do double pruning, that is, we harvest during the natural cycle of the vines (between February and April). We vinify locally in our own canteen in a completely natural way, we do not use any oenological additives. Spontaneous yeasts.
Due to the large temperature range during the maturation period (cold nights and hot days), we were able to obtain wines of great uniqueness and expression, in addition to preserving the unique terroir without the use of additives. The vast majority of the production is intended for consumption in our Entre Vilas restaurant, which operates on weekends on the farm itself. The restaurant has existed since 2010 and is a fan of the slow food movement, with many ingredients produced locally and in the neighborhood. 6-stroke menu with a varied and extensive menu is the hallmark of our service.
