The Les Trois Toits estate has been worked by Martin, Pascal, Vincent and Cécile since 2019, according to the principles of agroecology, from the soil to the bottle: plant cover preserving living soils, biodiversity and water sobriety; trees within the culture for multiple virtuous interactions; a negative carbon footprint; permanent horizontal sharing of skills and knowledge. The search for balance and biodiversity is the motto of the estate. The vines and the cellar are located at the gates of Nantes, in the commune of Vertou, crossed by the Sèvre river, which gives its name to the Muscadet Sèvre et Maine appellation. The 20-hectare estate is grouped around the winery in three places: La Nicolière, La Louée and Le Bézier. The plots are mainly planted with Melon de Bourgogne, the endemic grape variety of the region which gave its name to Muscadet. About one hectare is planted with Folle Blanche allowing the production of Gros Plant and a Traditional Method. Finally, two hectares of agro-forestry are planted with more than 100 trees and 10,000 Gamay, Côt and Merlot vines. The soils of the plots come from the alteration of metamorphic rocks (mainly shale and silt). Plot work and manual harvesting make it possible to enhance our terroir through vinification adapted to each soil in a variety of containers (concrete vats, sandstone jars, demi-muids). The aging in vats ranges from 8 to 24 months: from pleasure cuvées with our natural French wines to gastronomic cuvées with our appellation and communal cru wines, we seek to offer unique tasting moments to all amateurs who come to our meeting.
