Monts et Merveilles is based on two very distinct areas. The first is located on the Camplong terraces planted with Syrah and Carignan totaling 1.20 Ha. The second is located in the heights of the Minervois at Cassagnoles at 420m above sea level. Terroirs of small mountains, wild and fresh. The 4 hectares of vines in the heart of Haut-Minervois, in the Haut-Languedoc Regional Natural Park are cultivated in Agro-ecology and Biodynamics. We pick our plants for herbal teas and decoctions which, combined with clay, propolis and Petit Lait, strengthen the vines. Our soils are alive, which is why we work very little on them. We have voluntarily chosen to take care of a small area on a human scale to do it well, with Love and to have time to serve by other paths such as gardening, eco-citizenship, helping people who in need, the creation of an eco-gîte ... " As Natural wine is made initially in the vineyard, our most delicate, fundamental and respectful actions are carried out in the vineyard. The work in the cellar essentially comes down to support, attention and respect for the Grapes and the juice. The wines are made with the precious help of indigenous yeasts. Sulfur if necessary is tolerated on grapes or bottled in infinitesimal doses. We made the choice to give back our Demeter and AB certifications in 2013 because we believe that it is not the financial responsibility of clean farmers to justify their actions respectful of the environment. Also, we no longer felt in tune with the evolution of AB and the products that are allowed there. AB requires its own labeling to have that of Demeter. So we separated from the 2. We simply act as Good Peasants while respecting all ecosystems.

Monts et Merveilles repose sur deux zones bien distinctes. 
La première se situe sur les terrasses de Camplong plantée de Syrah et de Carignan totalisant 1,20 Ha. La deuxième se trouve dans les hauteurs du Minervois à Cassagnoles à 420m d’altitude. Des terroirs de petites montagnes, sauvages et frais.

Les 4 hectares de vignes au cœur du Haut-Minervois, dans le Parc Naturel régional du Haut-Languedoc sont cultivés en Agro-écologie et Biodynamie. Nous cueillons nos plantes pour les tisanes et décoctions qui alliées à l'argile, à la propolis et au Petit Lait viennent renforcent les pieds de vignes. Nos sols sont Vivants, c’est pourquoi nous ne les travaillons que très peu.

Nous avons volontairement choisi de prendre soin d'un petit domaine à taille humaine pour le faire bien, avec Amour et avoir le temps de servir par d'autres chemins tels que le jardinage, l'éco-citoyenneté, l'aide aux personnes qui en besoin, la création d’un éco-gîte... »

Comme le vin Naturel se fait au départ dans la vigne, nos actions les plus délicates, fondamentales et respectueuses sont réalisées au vignoble. Le travail en cave se résume essentiellement à de l’accompagnement, de l’attention et du respect des Raisins et du jus. Les vins se font avec l’aide précieuse des levures indigènes. Le soufre s’il est nécessaire est toléré sur raisin ou à la mise en bouteille à des doses infinitésimales.

Nous avons fait le choix de rendre nos certifications Demeter et AB en 2013 car nous pensons qu’il n’est pas de la responsabilité financière des paysans propres de justifier leurs actions respectueuses de l’environnement.
 Aussi, nous ne nous sentions plus en accord avec l’évolution d’AB et des produits qui y sont autorisés. AB oblige sa propre labellisation pour avoir celle de Demeter. Nous nous sommes donc séparés des 2.

Nous agissons simplement en Bons Paysans en respectant tous les écosystèmes.
