2Ha estate in Alsace. Vines certified organic since 1997. An annual passage by tractor per row: work of the cavaillon and crushing of the wood on one row and light work of the soil and cavaillon on the other row. Possibly mowing before the harvest. Minimal and thoughtful treatment, copper and sulfur only and addition of willow willow and yarrow herbal tea. (3 treatments in 2019, with 400g of copper metal in total). Manual trellising, no trimming (braiding). Spraying 500 and 501 and working as much as possible according to lunar and planetary rhythms, non-certified biodynamics. Manual harvest, ratchet pressing, and no oenological intervention in the cellar, no inputs, no filtration and no fining. No pumping over or punching down during macerations, unless reduction is present. Pressing between 6 and 12 hours, slow and gentle, so no settling necessary. Aging in stainless steel vats or half barrels depending on the wine. Manual bottling.
