Víno Hubinský is a family winery located in Vinosady at the foot of the Little Carpathian Mountains. The Hubinský brothers inherited the passion for winegrowing and wine making from their ancestors. Their first vintage was 2008. Each year's experience kept pushing the quality of the wine higher and higher. During the decade after the brothers‘ takeover, they had been narrowing down the varietal profile in order to go deeper in the cultivation and creation of wine from the available varieties. The priority is careful processing focused on naturalness and terroir expression. The grapes are picked by hand. We tried out spontaneous fermentation with several wines from the 2016 vintage, and starting with the 2018 vintage all wines are spontaneously fermented. Our first unfiltered wine was Welschriesling, vintage 2016, which had fermented in a concrete pyramid. We started with ecological protection in 2017, and from 2018 the protection of vineyards is ecological 100%. In 2019, the ecological protection continued and in 2020, we started the first link to biodynamic protection where we combine ecological protection with hand-made plant extracts. Our ultimate goal is to become a biodynamic winery.
