Wine made using only grape juice, utilizing the power of nature ~
We use our own grapes, which are grown without the use of pesticides or fertilizers, and brew our wine without any additives. We believe that if the grapes are grown healthily, there is no need for filtration, clarification, the addition of yeast, or antioxidants. This is because we do not use pesticides such as fungicides or insecticides, so the surface of the grapes is filled with microorganisms essential for winemaking, such as yeast fungi that live in the fields. These indigenous fungi from our fields ferment healthily, so we can make wine using only grapes, without adding anything extra. These are the terroir (characteristics) of Ikka Wines.
~ Winemaking that adds nothing and takes away too much ~
We use our own naturally grown grapes and brew them without the use of antioxidants, clarification, filtration, yeast addition or heating. In order to bring out the best in naturally grown grapes, nothing other than grapes is added from the brewing process to bottling. We also bottle the wine without filtration, using the top layer of the liquid after the sediment has settled, so as not to "pull out" too much of the flavor of the grapes. We start our "winemaking" process from "creating the environment" so that the quality of the grapes directly affects the quality of the wine. The more we make wine, the more we want to be in harmony with nature.
