Fermentation and aging: Spontaneous fermentation with long maceration on the skins for 15 days in open vats. Manual breaking of the cap. Not filtered. No temperature control. Aging for 6 months in steel tanks. Tasting notes: With a bright amber color and an important structure, it has aromas of ripe apricots and medlars, as well as marine balsamic notes. In the mouth it is firm, welcoming and clean. Brilliant in the finish. A feast of the senses.
