Yea! I read that afterwards because I was so intrigued by the wine. Hate that I didn’t get the memo before I drank it! Next time for sure!

We tried this wine at a restaurant and loved it so much we brought a bottle home. The somme told us to lay it on its side for ~3 days before opening to let the sediment sink and then decant it before drinking. In case you ever pick up another bottle :) It’s wonderful!

Apricot and passion fruit, with light CO2 and tons of sediment. Luckily comes in a 1 liter bottle, for those who don't like sediment, but the cloudy end had the same taste and aroma as the clear glasses. This is practically the closest one can come to a wine without human intervention. The amazing 2007 has 13.5%, the not-so-good 2008 has 14.5%, and this excellent 2013 has only 12.0%. Whatever the moon says, goes.

Getting better with age. Sharp on the front, but smoothes right out after. Lovely drinking.

At first the color pouring into my glass made me think it had went bad! Almost grey/brown juice. But the smell was pretty nice and the taste even better! Almost fermented cider-like. The taste continued to change as it opened up and breathed. I wish I had put this one in a carafe! Nice acidity, very citrusy but finished very earthy and nutty.
