Organic farming since 1975. Biodynamics - Demeter certification since 1998. Harvest 100% manual. Harvest reception gravity, no use of pumps. Pneumatic pressing. Fermentation 100% in indigenous yeasts. Aged in amphorae for 15 months, then aged 1 year in bottle. No fining, no filtration. No added sulfur. 2385 bottles/ 105 magnums per year. Manure, flowers, smooth citrus flavor, light creamy finish. Elegantly.
