Pax Wines is a small, family owned winery in Sebastopol, CA. Established in 2000 and currently producing 5,000 cases of Syrah, Chenin Blanc, and Gamay Noir, along with a host of lesser-known varieties from Northern and Central California. At Pax Wines winemaking is approached holistically. This is done by taking care to use only grapes that are grown using organic, sustainable, and/or biodynamic methods and applying no unnatural additions in the cellar.
