Work in the Vineyard
We cultivate our vineyards exclusively by hand.
With the exception of mowing and mulching, no mechanical interventions or machines are used.
All work – pruning, canopy management, vine care, yield regulation, and harvesting – is done manually.
We work in harmony with nature and with great respect for the vines, soil, and environment.
Interventions are deliberately minimized and only carried out when absolutely necessary.
Our goal is to produce healthy vines and grapes with natural balance and individuality.
Yields are deliberately kept low to promote quality, expression, and origin.
Grape varieties cultivated:
- Müller-Thurgau
-Sauvignon Blanc
- Garanoir
- Pinot Noir
The grapes come exclusively from our own vineyards in Mönthal (AOC Aargau) and Döttingen (AOC Aargau).
Cellar work
In the cellar, we pursue a consistently minimalist, low-intervention approach.
The effort is deliberately kept to a minimum in order to best highlight the wine's unique character.
- Spontaneous fermentation of all wines
- Minimal technical intervention
- No routine fining or filtration
- Aging, depending on the wine, is done classically in barriques or amphorae
Sulfur (SO₂):
We use sulfur very sparingly and only when necessary. If added at all, it is in minimal quantities, adjusted to the natural stability of the respective wine.
No red wines at the moment.
No rose wines at the moment.
