2022 Chablis Vent d’Anges (maximaal één doos per klant). Mooi open, citrus, floraal. Fijn wit fruit, zacht en gul, met een frisse hint van abrikoos in de afdronk. 80% cuve 20% in barriques, twee winters rijping sur lie. Gebotteld met 20 mg SO₂ totaal, waarvan 10 mg vrij In juni én januari langs Pattes Loup van rebel Thomas Pico (39). Voor Neal Martin (Vinous), The Wine Advocate, Jamie Goodie en Revue du Vin de France nu bij absolute top Chablis. Thomas, gedreven, compromisloos, voedt zijn wijnen 2-4 jaar(!) op, heeft het laagste rendement van heel Chablis, plukt het laatst, werkt vanaf begin biologisch, nu biodynamisch. De wijnen extravert, zacht, jong al té lekker (weinig sulfiet), breken met klassieke imago chablis van strakdroog, (roestvrij)stalig. Voor wie het nog niet weet: wij voeren de wijnen van Thomas Pico (Pattes Loup) vanaf zijn eerste oogst 2006… Thomas, een jonkie toen, is de afgelopen jaren uitgegroeid tot een van de grote sterren van Chablis, heeft nu al twee sterren in Le Guide des Meilleurs Vins de France (Dauvissat en Ravenau: drie): de top is in zicht….
