Hapax has 8 days of 'maçeration'. This means that the skins have been soaking for 8 days, which is what gives the wine its yellow-orange colour and spicy flavour. After fermentation, the wine has a 2nd malolactic fermentation in oak barrels and then matures for another 10 months. This wine is S.A.I.N.S. or 'Sans Aucun Intrants Ni Sulfites ajoutés'. And it is delicious!
