Very very oldskool! Tradities zijn er om behouden te blijven, dus, omdat grootvaders grootvader het al deed, doen we het nu ook nog steeds. Alleen mousserende wijnen maken, want stille wijnen, wie maalt daar nu om! Beetje gekte natuurlijk maar laten we dankbaar zijn, want wat er dan aan mousserends uitkomt is toch echt wel heel erg goed, het lijkt net of dit embedded is in generatieslange zoektochten naar perfectie.
