We are still testing different varieties, right now we have 13 different varieties and are always looking for better quality. We let our vines grow in a natural environment. We have a lot of trees, wild grasses and shrubs on our land, we have at least 20% of our land natural were we do not grow any grapes. Good for insects and bigger wildlife. We have planted hundreds of trees around the vineyard. We sow the rows between the vines with a special mix of herbs to get more biodiversity and more insects, frogs or small mammals. We only mow a couple of times a year so we don t drive over the land too much. Everything hand picked and as late as possible so we get the best ripeness. Since we do not use any fungicides, there are a lot of wild yeasts on the grapes so wild fermentation start easily. In this way we hope to express more of our vinyeard into the wine. We combine a modern press, low pressure and closed from air, and fermentation in stainless steel with maturation in barrique and ceramics. For the skincontact wines, red and orange, we do not use any sulphur during vinification and sometimes only a very small amount at bottling.
