Maher Harb - Sept Winery

Since its inception, Sept has been dedicated to discovering a genuine identity for Lebanese wines through the expression of terroir. Planting the first and only biodynamic vineyard in 2012, we continued with our mission by creating single-vineyard wines from franc-de-pied indigenous grape varieties.

At Sept, each bottle tells the story of one single vineyard and one terroir in line with our objective to showcase the richness and diversity of the Lebanese terroir. We are the only winery in Lebanon that indicates the origin parcel of the grapes on the label. Our approach is based on unearthing forgotten indigenous varieties and sharing them with the world in the most honest way. Our own vineyard follows a biodynamic approach, based on a no-ploughing, no-irrigation, chemical-free, and minimal-intervention approach. We follow the lunar calendar and the biodynamic principles to guarantee the yielding of a high-quality fruit at 950m facing the Mediterranean Sea. Our model is also based on outsourcing grapes from different regions in Lebanon. We select these vineyards according to organic viticulture standards and personally manage them.

To further support the authentic expression of these terroirs by best showcasing the expression of their soil, climate, and fruit, our fermentation process relies on:

• Wild yeast/ spontaneous fermentation
• Natural stabilization and minimal filtration of wine
• Zero additives during fermentation process
• Only small amount of sulfite added before bottling (below 3g/hl total SO2)
• No use of oak barrels (inox tanks) - Lees aging.
