Basic philosophy of agricultural music
Agricultural music has the meaning of "bending, shaking, enjoying farming," "stray work," and "continuing to pursue our ideals without belonging anywhere." The consistent philosophy is "to provide what we are satisfied with, to have an income that suits ourselves, and to feel the utmost happiness."
How to grow grapes and vegetables
Private farms do not use synthetic pesticides, fertilizers or herbicides. For grapes, we use organically certified grapes (inorganic copper, microbial pesticides) only when needed. Vegetables and other fruit trees are completely pesticide-free. Whether to raise soil or no-tillage, and whether to adopt biodynamics or homeopathy depends on the field conditions and crops. It's actually very difficult, but I'm not going to stick to one farming method.
We have an environment in which we can obtain high quality grapes other than our own farms, but we do not impose our philosophy on the farmers who provide the grapes. There are a variety of farming methods, from those that meet organic farming standards to pesticide reduction and conventional farming methods.
How to brew wine
The same idea applies to winemaking at Nogakuzo. Wild yeast fermentation, no filtration, low (no) sulfite is basic, but whether to de-stemmen, whether to raise or lower the fermentation temperature, which cuvee to use, what kind of extraction, etc. The method of brewing depends on the condition of the grapes. I try to avoid blending before bottling and try to make one cuvée as early as possible.
