Monte Caro is a 7-hectare farm: 5 hectares of vineyards and 2 hectares of olive groves. We are located on the southeast slope of Mount Caro, in the Mezzane Valley. The farm is surrounded by woods; the winery and our house are nestled in the vineyards, which range in altitude from 150 to 300 meters above sea level. The farm was founded by our father in 1986, which is why we have vineyards of varying ages. We began experimenting with winemaking in 2007, and began bottling our wine in 2014. To better control the vineyard's microclimate, all operations are performed manually. Organic farming is supplemented with microbiology (mushrooms, algae) and herbal decoctions to regenerate and enhance the vitality of the soil, which is increasingly rich in wild herbs. We are increasing the number of fruit trees and a few beehives around the vineyards. We harvest by hand and our wines ferment spontaneously. We don't use any chemical additives, and sulfites are usually between 20 and 50 mg/l depending on the type of wine. All our wines are unfiltered.
