Cantina La Bacheta has its roots in Custoza, on the morainic hills surrounding Lake Garda. The farm has approximately 4.5 hectares of surface area including 3.5 hectares of vineyards and 1 hectare dedicated to woodland, fruit trees and olive trees, and vegetable gardens. The entire surface area is managed following the certified organic method.
We pay particular attention to the protection and preservation of ecosystems and the structure and organic substance of the soil, favouring the coexistence of different crops. We therefore try to limit the operations that cause soil compaction, and we also help ourselves by using green manures as well as pollinator-attracting and other nitrogen-fixing essences. We follow principles of regenerative agriculture, manuring as needed, with manure from small local farms, and integrating vegetable waste, pruning and green manure, into the soil.
The vineyards are divided into three different plots, two with a north-east exposure and the other with a south-west exposure. The parcels touch different tongues of moraine soils, from red soils rich in iron to white soils of sand and gravel. The yield per hectare is an average of 50 quintals with an average production of 12 thousand bottles. We cultivate authocthonous varieties with vines ranging from 25 to 65 years old, in which there are different clones of Garganega, Corvina, Rondinella, Trebbianel, Fernanda and Trebbiano Toscano.
The territory of Custoza enjoys the microclimate of the Garda area and its morainic hills. The winds that ascend and descend the basin of Lake Garda favour the aeration of the grapes in spring; the good temperature ranges allow the varietal characteristics of the grapes to be fixed and preserved during ripening. Flavour and depth are conferred by the interesting mixture of soils, ranging from the loose soil of the hill ridges to the clay tongues of the valley floor.
Only the grapes enter the cellar and the wine comes out.
