Col Tamarie
The Col Tamarie winery is located in San Lorenzo, on a hill 450 meters above sea level above Vittorio Veneto, in the Treviso Prealps. The property is surrounded by olive and apple trees, woods, and hedgerows in a rural setting to preserve biodiversity. The soils have a substratum of limestone and dolomite rock of marine origin, with a surface layer of mostly rocky glacial moraine. There are 5 hectares of vineyards and a small field where we grow traditional local grains.
For years, we've avoided the use of pesticides, herbicides, or synthetic chemical plant protection products in the vineyard. We use homeopathic, phytotherapeutic, and flower-based remedies, combined with other "subtle" practices to increase the energy of the plants and the environment and minimize the use of copper and sulfur.
In the winery, we practice non-interventionist oenology, which consists of practices aimed at maximally preserving the organoleptic, nutritional, and vibrational qualities of the grapes, intervening only as little as necessary to accompany the grapes in the process of transformation into wine.
No invasive interventions, no additives or substances external to the grapes and wine. Spontaneous fermentation with indigenous yeasts, no filtration or fining, and the second fermentation occurs using the must from the following harvest. After years of experimentation, we have noted the beneficial effects of using certain types of sound vibrations and the use of certain types of crystals and precious stones.
These practices have been extended to the entire production, helping to give the wines greater authenticity and vitality. The grapes grown include Glera, Bianchetta Trevigiana, Prosecco Lungo, Malvasia, Riesling, Pinot Noir, Cabernet Franc, and a few rows of Bronner and Johanniter.
Col Tamarie is the wine we've been producing for the longest time and reflects the tradition of true Proseccos before the advent of autoclaves. It comes from prized mixed vineyards, with Glera/Prosecco as the primary grape, and Bianchetta Trevigiana and Prosecco Lungo as a "varietal blend," which impart unique, unconventional aromas and flavors that preserve the cultural traditions of our area. Staggered harvests ensure varying degrees of ripeness based on the current seasons. The wines are made exclusively from grapes from our own vineyards.
Casale Caldesòra , a country house nestled in the Prosecco hills, is also part of the Col Tamarie winery. It's designed for a relaxing stay immersed in nature. Renovated from a 17th-century farmhouse, it offers welcoming rooms, a panoramic pool surrounded by vineyards, and a breakfast featuring local products. Wine tastings and events are also available upon reservation.
