Initially focused on producing extra virgin olive oil, the company gradually expanded its activities into viticulture, obtaining organic certification in 2005.
Currently, Inserrata cultivates about 10 hectares of vineyards, where varieties such as Sangiovese, Merlot, Chardonnay, Vermentino, and Trebbiano grow. The annual production amounts to around 20,000 bottles of wine and 1,000 liters of EVO oil. The company adopts organic cultivation methods, using techniques like green manuring and limiting the use of sulfur and copper for vine protection. Grape harvesting is done manually. In the cellar, Inserrata favors spontaneous fermentations or those using pied de cuve, controlling temperatures for some wines. Clarification is done with egg albumin produced in-house, and the use of sulfur is limited. Before bottling, the wines undergo non-sterile filtration.

The company stands out for its organic approach and focus on terroir, with a recent emphasis on producing white and rosé wines, a choice influenced by the presence of fossils and limestone in the soil. This production philosophy reflects Inserrata’s commitment to enhancing the unique characteristics of its territory and producing wines that are an authentic expression of it.
