Podere le Volute - Claudia Galgani
My small company is located in the south, in the municipality of San Gimignano and was bought in part by my father in the 70s. Over time I have managed to buy other neighboring land and I currently have about 650 olive trees and 5 hectares of specialized vineyards, all certified organic from Icea.
Of Pliocene origin, in these areas rich in Etruscan and Roman remains, there are also many marine fossils including the sea urchin which gave rise to the name of the company and the wine labels.
I took part in the first official biodynamic agriculture course which took place in Florence in 1994-1995 and that was the real beginning of a wonderful adventure which gave me and is still giving me great satisfaction.
I immediately eliminated machinery with rotating parts that compact the soil in favor of the ripper and the flail mower. I use composted manure from my horses and green manure, always paying attention
to work the land at the right moments, when it is "hardening".
In the vineyard, raised with an inverted arch in the Tuscan manner, I use powdered/wettable sulfur, very little copper hydroxide, being at 300 m. slm luckily I don't need it much.
The harvest is done by hand, for me it is important that the grapes arrive as intact as possible in the cellar.
The wine I get, Chianti docg, Vernaccia di San Gimignano docg, Novello igt, are made in the vineyard and in the cellar I try to influence as little as possible.
Fermentations take place at a controlled temperature, I do not use tannins or wood.
I regularly decant and while using it, I pay close attention to the use of metabisulphite.
