We only had theoretical knowledge, thanks to three mini-documentaries we made about natural wine in Sicily, Catalonia, and Champagne (Rap, Cigar, and Natural Wine) and a book I wrote and photographed about natural wine in Catalonia (Es Brutal!, published by Cambourakis). The project was agricultural in nature: how to care for soil with minimal intervention? How to allow worms, insects, and animals to thrive? How to make as many antagonists and as much biodiversity coexist as possible? The idea was to create a balance between all forms of life, with the conviction that the resulting wine would be vibrant and delicious. But how to turn desire into reality?
