The Alice Bonaccorsi (ValCerasa) company is the result of the passion and dream of Alice, who in 1997 started this exciting adventure in the world of viticulture and wine production together with her husband Rosario.
In 2000 they acquired the land in Croce Monaci on the northern side of Etna which today constitutes the beating heart of the company. From here, they have expanded to cover an area of approximately 20 hectares, half of which are intended for the cultivation of vines, while the rest is home to olive trees for the production of their prized oil, as well as some structures that they intend to use to expand the experience, including the possibility of hospitality.
In the vineyard, the company follows the organic cultivation method. The main objective is to guarantee each vine an optimal growth path, making it increasingly resistant to climatic variations. The land is cared for manually, with a deep respect for the surrounding ecosystem and biodiversity. Mainly using the sapling training system, the vineyards are kept deliberately stony, allowing the roots of the vines to draw nutrients deep down and absorb all the minerals present in the particular volcanic soil they enjoy.
In the cellar, winemaking takes place in a completely natural way, without the use of chemical products. The natural winemaking process is followed, with fermentations starting spontaneously, exploiting physical principles such as temperatures, in order to guarantee a high quality, pleasant and healthy final product.
While preserving the territorial heritage and deep-rooted traditions, Valcerasa looks to the future, maintaining a family structure. Thanks also to the second and future generation, represented by daughters Sofia and Teresa, the company is committed to authentically transmitting the beauty and power of the territory, communicating the essence of Etna for what it was, is, and will be for those who have always lived and worked there.
