Ogni appezzamento su cui sono coltivati i vigneti aziendali prendono il nome dai precedenti proprietari; in Monday Lisa abbiamo la varietà Regent dall’appezzamento “Zawadzka”, il Cabernet Cortis da “Dudzińska” e il Rondo dagli appezzamenti “Popów” e “Wasilewska”. Tre varietà autoctone polacche in questo identitario blend; fermentazione spontanea a cui seguono un breve affinamento in acciaio e una maturazione di 40 mesi in legno di rovere francese.
