Cascina Roccalini - Paolo Veglio
The history of Cascina Roccalini begins in 2004, when Paolo Veglio, a young and passionate winemaker, began making wine from the grapes from his own vineyards after having sent the bunches to another winery for years.
Cascina Roccalini cultivates approximately 5 hectares of vineyards with the traditional Langhe varieties Nebbiolo, Barbera and Dolcetto, grown according to the principles of organic farming. The vineyards are surrounded by hectares of proprietary forests, which we have chosen to maintain in order to preserve the biodiversity of the area. In the cellar, fermentations take place thanks to the sole intervention of indigenous yeasts, accompanied by long macerations on the skins with a submerged cap in concrete or stainless steel tanks, while the refinement takes place in the same type of wine containers or in large Slavonian oak barrels , depending on the wine. Throughout the entire process, the use of clarification or filtration operations is excluded, with maximum respect for the territorial and varietal characteristics.
