Soltufo - Nico Priano
SOLTUFO was founded in the municipality of Gavi with the aim of producing a fine wine for private consumption, a healthy product that reflected the terroir and respected the raw materials. In the early years, they worked abandoned, inaccessible, and difficult vineyards.
Since 2021, 4.2 hectares of vineyards of native varieties such as Dolcetto, Barbera and Cortese have been managed.
The vines grow on white marl hills overlooking Mount Tobbio, caressed by breezes from the Ligurian Sea. Only sulfur and copper are used in minimal quantities in the vineyard.
The land is left grassy.
In the cellar, as in the vineyard, no synthetic chemicals or oenological products of any kind are used.
The harvest is manual, the grapes are collected in small crates.
Fermentations are spontaneous, without the addition of sulfur dioxide either to the grapes or to the wines.
Long macerations are preferred, no filtering is done.
Each wine is born from a simple and direct approach: grapes, territory and time.
No artifice, just the desire to share what our land has to offer.
The area is that of Lerma, a small mountain town in the Alto Monferrato, between Gavi and Ovada, on the border with Liguria, an area that has always been devoted to wine.
