In the pergola of the garden of Ezio Cerruti's winery we read: "He who experiments can lose, he who doesn't experiment has already lost". A provocation first of all towards himself, who began producing wine on his own in 2001, in Castiglione Tinella , between the Langhe and Monferrato: the paradise of Moscato Bianco.
Ezio loves his land and it shows in his non-interventionist philosophy.
The agronomic management is based on the complete exclusion of synthetic chemical products, on the use of low doses of copper and sulfur and on the grassing of the vineyards. In the cellar, fermentations are entrusted solely to indigenous yeasts. Throughout the entire process, the wines are not subjected to any clarification operation and the use of sulfur dioxide, only if necessary, is reduced to a minimum.
Ezio leaves full freedom of expression to the vineyard and the territory, observes and interprets without adding or taking away anything from the essence of the land. This is how still, sparkling or passito white wines are born, as well as some new experiments with red grapes purchased from friendly winemakers.
