IN THE VINEYARD
We grow approximately 3 hectares of vineyard in Cupramontana in the Manciano district on two parcels planted in 1970 and 1976 located at 300m above sea level and adjacent to the forest that completes the property. The variety is Verdicchio with some Trebbiano and Malvasia plants.
Certified as an organic company, our commitment is to remain well below the limits prescribed by the rules of organic viticulture. In the vineyard we only use contact products based on mine sulfur and copper, in the period between mid-April and mid-July, to contain powdery mildew and downy mildew; doses and frequency are chosen from time to time by us based on observation of the progress of the season.
The soil of the vineyard, composed of clayey marl and chalk, is never disturbed. We do not use fertilizers of any kind and only in August, at the end of the annual cycle of the wild herbs present in the vineyard, is shredding carried out.
We believe that a balanced vineyard is the best defense against pathogens and the guarantee of healthy plants that produce the best fruit, which is why we do not eradicate anything that spontaneously lives in the vineyard, even that which makes the work more difficult or which would seem to penalize the vines, trying to safeguard their natural biodiversity.
IN THE BASEMENT
We make our wines in total freedom, using only our own grapes, without the help of consultants, keeping in mind the meetings we have had with winemakers who persist in thinking about viticulture in a divergent way.
Our wines are the result of spontaneous fermentations without the addition of sulfur at every stage of winemaking. We do not use any substances permitted for oenological use, we do not practice temperature control. Our tools are a crusher-stemmer, a lever press, a pump and stainless steel tanks.
At the end of the alcoholic fermentation we decant the wine which remains on the fine lees until bottling which takes place without clarification and filtration; any residues on the bottom of the bottle testify to the evolution that the living wine undergoes in the bottle.
The uniqueness of each vintage and our desire to continue experimenting mean that, despite following a common outline, our wines are different every year.
