We are a 100% organic winery and use only verdigris and sulfur in the vineyard. We spray by hand or with a tractor, and the harvest is manual. After harvesting, the grapes are transported (at a controlled temperature) to the new winery in Montesarchio (BN). Here, a second selection of the bunches takes place and the grapes are destemmed and crushed. Fermentation occurs with indigenous yeasts and without temperature control. Sulfur dioxide is added, if necessary, in very small quantities only after fermentation is complete, before bottling. The use of any other products is prohibited in the vineyard and winery.
The company also has two vinegar factories for the production of TRADITIONAL Modena balsamic vinegar, one started in 1969 and one in 2000 and will soon begin producing extra virgin olive oil.
