The Kolónia 52 winery is established by two friends Annamaria Török and Attila Francisti on Szent György hill next to lake Balaton.
The project started in 2021 with a small scale of 1,5 hectares of vineyard. Since the beginning, we are cultivating the vines organically expanded with biodynamic methods. In 2024 the estate reached the size of 5 hectares, which is the size limit for us, what we can still control and focus on the quality and expression. The vineyards are around Szent György hill, mostly on volcanic soil and limestone.
In the vineyard, we are using handwork for the canopy management and a small tractor for the soil work. Most of the time, we are only cutting the grass; it is a very rare occasion when we are opening the soil. We like letting the microbes and worms do their thing in the soil, and also don't wanna brake the mycorrhiza web.
Natural diversity is very important for us, therefore, we are planting trees and sowing many kinds of weeds and herbs on and around the vineyards.
At the moment we have international and autochton grapevarieties like Furmint, Olaszrizling, Riesling, Pinot Noir and Kékfrankos. One of our goals is to plant more indigenous varieties.
Our winemaking process is pretty simple. We handharvest everything and not using any additions in the juice or wine. In emergency occasion (raising volatility or unbearable mouse) we are using sulphur but the maximum of 15 mg/l. The white wines are made with a gentle direct pressing sometimes we keep them on skin for maximum few days. We use a lot of whole bunch and short maceration during the red winemaking process. We are aging the wines in big french oak barrels and clay amphoras. We are not using any machine exept our electronic basket press. Racking and bottling is going by gravity and no pump. We are bottling with a small manual bottling machine.
