Certified organic since the 1990s a strong focus on balanced, living soils goes hand in hand with biodiversity projects in and around the plots. Among others Silvaner, Pinot and historic varieties grow on limestone hills producing the best grapes in the dry and hot summers typical for the area.
The majority of the juice ferments and ages in Franconian oak barrels of all sizes for at least one year, often longer before being bottled unfiltered and without the addition of sulphites.
