Our cellar is near the historic Khornabuji fortress. We own approximately 2 hectares of vineyards. Part of this vineyard (about 1 hectare) consists of old vines planted in the 1980s, featuring the Georgian grape variety Rkatsiteli. The other part is newly planted with varieties such as Vardisferi Rkatsiteli, Kakhuri Mtsvane, Khikhvi, Grdzelmtevana, Kakhuri Mtsvivani, Shavi Rkatsiteli, and Simonaseuli, some of which have already yielded their first harvest.
As natural winemakers, we do not use systemic pesticides, herbicides, or any kind of fertilizers. Our vineyard is dry-farmed, and we rely on our old Japanese "Kubota" tractor, which has been a great help in our work. Our annual production is around 4,000-5,000 bottles, and we have no plans to increase this quantity. We produce our wines in both Qvevri and stainless steel tanks. During fermentation, we use no commercial yeasts, chillers, or any other modern additives—only a minimal amount of sulfur when necessary.
Although we do not hold an official organic certification, we are members of the Natural Wine Association (NWA) and the Women in Wine Industry Association (WIWI). Being part of the NWA means undergoing an inspection process every year to ensure our practices align with natural winemaking standards.
The 2023 harvest was impacted by fungal diseases, but the 2024 harvest has been one of our best yet, and we've introduced some new wines.
