A land of shale nestled in the heart of the Maures massif, taking advantage of the maritime entrances to the Gulf of Saint-Tropez. The vines were planted in a valley at an altitude of 350m by Pierre GERIN on land formerly belonging to his grandfather. He bought them, replanted them and works them organically.
The soils are not worked directly, aggressively. They are maintained by plant covers which are always present on the soil. Cover maintenance is carried out by rolling or mowing and grazing.
The treatments are carried out with low doses of copper and sulfur reinforced by herbal teas.
The grapes are harvested by hand to preserve their integrity. they spend 24 hours in cold storage. Then they are vatted or pressed while preserving their integrity as much as possible. Fermentations start spontaneously. The wines are then followed during aging in barrels or jars, lightly sulphated if necessary.
The wines are then assembled and bottled, without filtration or fining. We carry out light sulphiting, in order to preserve the qualities of the product over time.
