We harvest the grapes when they are fully ripe, at a potential alcohol level of 13° to 13.5° for our reds and dry whites. In the cellar, we vinify naturally. Our wines are made with ripe grapes. No additives, no chaptalization, no enzymes, no exogenous yeasts, no flavor enhancers. No oenological techniques, no reverse osmosis, no micro-oxygenation. Natural wine is the opposite of industrial wine; it is alive. Our wines taste of the grape, and since the vines are organically farmed, they also reflect their terroir. This is why we vinify each plot separately. Le Rouchefer and Les Bonnes Blanches, although vinified in the same way, are very different.
