The estate is located in in the air of the Saumur appellation. It includes a total area of 14 hectares on land composed of: essentially clay-limestone. All our vines have been managed and cultivated according to the rules of organic farming since 1993 and biodynamically since 2007.
Our wines are vinified and matured by us: in vats, barrels and jars, grapes and grapes. or whole cluster each maceration is a creation.
The philosophical concept of the winemaker:
Basic principle: the soil is a living environment! Fertility of the soil depends, to a large extent, on its activity. biological (micro-organism, worms, earth...)
Role of living soil organisms: soil structure and soil stability structural, activity microbial (mucus), earthworms (up to 20% of the volume of soil stirred per year), availability of nutrient elements: flora of decomposition of organic matter, flora of assimilation which promotes root absorption. To improve fertility soils, organic agriculture which must respect living organisms, thanks to appropriate working methods (composting of organic matter, tillage, partial permanent grassing). Two essential points for the activity microbial: supply of organic matter, oxygen needs (soil aeration).
