Florian Zuliani is a farmer-baker-winemaker
I set up alone in 2020 in Champ/Layon. I took over the land and buildings of a beef cattle farm; this includes about 20ha that I use in rotation for cereals which are: a mixture of ancient wheat, einkorn (or small spelt) and rye. Initially (2020 and 2021) I rented 1ha of Chenin on Bonnezeaux. Today I have brought all the vines closer to the farm (max 4kms): 1ha of Chenin and 0.5ha of Grolleau Noir and 0.5ha of Cabernet Franc.
I work entirely organically, the cereals have no treatment or fertilizer, I almost always work without plowing (with the exception of 2024).
In the vineyards, I am thinking a lot about treatments with reduced doses of copper and sulfur and the use of plant preparations and manures and other fermentations to boost soil life. Very little mechanical weeding, most of the grass is mowed (even inter-vine) except in the parts where I have replanted. Everything is done by hand (pruning, disbudding, leaf stripping, harvesting, etc.).
